Finca El Jardín 

This beautiful Chiroso micro-lot comes from Finca El Jardín, a high-elevation farm (1,950–2,050m) in Santa Bárbara, Antioquia. The farm is owned by Léo Henao, a highly respected producer with a long career in coffee quality, processing, and fermentation science. After years of working across Colombia and sharing his expertise with other growers, Léo now uses El Jardín as a space for experimentation, variety testing, and small-scale precision processing. 

The Chiroso Variety

Chiroso is a rare variety originally found in the nearby region of Urrao - Colombia. Once thought to be a mutation of Caturra, recent studies show it is actually an Ethiopian landrace, related to varieties like Gesha. It is known for its floral, complex and expressive cup profile, especially when grown at high elevations and processed slowly.

Local growers have identified two types of Chiroso: a shorter “Caturra-type” and a taller “Bourbon-type.” The Bourbon-type was only recently identified, and early plantings showed exceptional flavour potential. Seedlings from these trees are now being shared with a small group of trusted farmers through Léo’s exporter partners.

 

Processing

This lot was hand-picked and fermented in cherry for up to 48 hours before being carefully pulped. The coffee then underwent a second fermentation of up to 72 hours in complete darkness, a technique Léo believes supports healthy microbial activity and improves flavour development. Freshly picked cherries were added throughout to lower pH and allow for a long, controlled fermentation, contributing to the coffee’s vibrant, wine-like acidity.

After fermentation, the coffee was washed, dried in the sun for several days, and then finished slowly in greenhouse-style silos to ensure even drying and stable water activity before export preparation.
