Coffee has been part of Jairo López’s life from the very beginning—he grew up in a family of coffee growers and has carried on the tradition with passion. About fifteen years ago, he started producing coffee independently, and ever since, he has been dedicated to refining his craft. His decision to focus on specialty coffee came from a desire to gain recognition for his hard work and to build a more sustainable livelihood.

When Jairo first ventured into specialty coffee, the concept was still relatively new in his region. But true to his nature, he didn’t look sideways at what others were doing—he poured all his energy into constant improvement. He believes his farm’s greatest strength lies in its unique terroir: rich volcanic soils and an ideal altitude that set the stage for producing exceptional coffees.

His farm, Finca Villa Noreña, sits near the Nevado del Tolima, where diverse microclimates create complexity and depth in every cup. This natural advantage, combined with Jairo’s dedication, results in coffees that carry both character and quality.

The Coffee

This coffee is harvested only when the cherries are perfectly ripe. We’d been chasing after it for a while, knowing that Jairo was experimenting with something unique—a “blend” made from two of his favorite varieties grown on his farm. It’s a mix of Yellow Bourbon and Pink Bourbon, both single-origin, but brought together at the source. The result is something truly special, and we’ve been absolutely loving it.

After harvesting, the cherries are floated and hand-sorted before being fermented anaerobically in GrainPro bags for 48 hours. Once fermentation is complete, the drying process begins. Every four days, the coffee is removed from the African beds and placed back into GrainPro bags for around 120 hours. This technique extends fermentation at a lower water content, enhancing the coffee’s aromatic profile and adding depth to the cup.
