This Pink Bourbon comes from Santa Maria, Huila, grown at 1,800 MASL, a region known for its volcanic soils, high elevation, and slow cherry maturation — ideal conditions for clarity and aromatic complexity.
This lot is produced by Diego Horta and Edier Perdomo at Los Pinos and La Primavera farms, where attention to detail in both the field and processing plays a key role in the final cup. Pink Bourbon thrives here thanks to Huila’s diverse microclimates and the farmers’ careful approach to harvesting and fermentation.
The coffee undergoes a semi-washed process, starting with 24 hours of cherry pre-fermentation, followed by 36 hours of aerobic fermentation. After fermentation, the coffee is sun-dried on raised beds for 15 days, moved daily to ensure even drying. Once the ideal moisture level is reached, the coffee is stabilized in GrainPro bags for 20–30 days before milling — helping preserve freshness, structure, and flavour clarity.
In the cup, this coffee is delicate and expressive. Expect bright tangerine and citric acidity, balanced by green apple crispness, green tea–like softness, and a lingering floral finish. It’s elegant, calm, and highly drinkable, with a silky texture and a clean aftertaste.
Roasted lightly in Melbourne to highlight origin and variety, this coffee shines as a filter and rewards slower brewing and attention to detail.
