Sara Gutierrez
Sara Gutierrez grew up on her family’s coffee farm in the lush, misty mountains of Buenavista, Colombia. She is the fifth generation to cultivate those hills, harvest those cherries, and live by the rhythms of the land.
But the coffee industry was changing. Prices were falling, and the traditional way of farming was no longer enough. Her father, proud and deeply committed to the methods that had sustained the family for generations, believed the answer was to keep going as they always had: cut costs, stay the course, and play it safe.
Sara saw a different future.
She believed their farm could produce world-class specialty coffee. Coffee that would be recognised on the cupping table, enjoyed in cafés around the world, and valued for both its exceptional quality and the story behind it.
Pursuing that vision meant rethinking everything. It meant experimenting, taking risks, and challenging traditions that had defined the farm for decades. Most difficult of all, it meant standing up to the person she respected most: her father.
Our relationship with Sara began in 2021, when we had the opportunity to buy her coffee for the first time. Even then, it was clear there was something special about both the quality of her coffee and the passion behind it.
In 2022, we travelled to Quindío to meet Sara in person. Spending time with her on the farm, hearing her talk about coffee, and seeing the care she puts into every detail completely changed our perspective. Her charisma, her relentless pursuit of quality, and the way she speaks about coffee left a lasting impression on us.
Since that day, Sara has held a very special place in the story of El Parche. In fact, there is one of our coffee label designs that has never been used for anyone else. It has remained exclusively hers because that’s how special she is to us.
Earlier this year, Sara had the opportunity to visit Melbourne, and we were incredibly proud to welcome her to our roastery. Sharing our space with someone who has been such an important part of our journey was a truly full-circle moment, and one we will always remember.
The Coffee
Yellow Colombia
This release showcases a Yellow Colombia processed using carbonic maceration. Whole coffee cherries are fermented in a carefully controlled, CO₂-rich environment before processing, allowing the fruit to develop exceptional clarity, layered complexity, and vibrant fruit-forward flavours.
The result is a remarkably expressive cup with refined sweetness, a silky mouthfeel, and a bright, elegant finish that highlights both the innovation of the process and the unique character of the variety.
